Fortification of carrot (Daucus carota L.) and snakehead fish (Channa striata) in bagea product for nutrition fulfillment patients of type II diabetes mellitus (DM)

Abstract Sago ( Metroxylon sago ) is generally found in central and eastern Indonesia. The nutritional content of flour per 100 grams 94 g carbohydrates, 0.2 protein, fat, 14 water content, 355 cal calories. also has a low glycemic index <55. One the product developments Bagea, typical Sulawesi cookies made from that can be fortified with local natural resources such as carrots snakehead fish flour. purpose this study was to obtain best composition, determine chemical characteristics bagea products produced after fortification, analyze load levels so it safe for consumption by people Type II Diabetes Mellitus (DM). stages were sample preparation, making two treatment factors form variations concentration (10%, 15%, 20%) physical (flour, puree, juice) 15 each. results obtained formulation 85% flour: 15% fortification carrot flour, juice, puree conclusion (85% flour) juice high IG category (>70). However, still consumed DM sufferers BG value 9.44 each 9.60 (low BG<10) if much 20grams/serving dose.
